- 4-5 ripe tomatoes, the insides scooped
- 5 hard boilde eggs
- 200g/7oz feta cheese
- 100g/3.5oz light mayo
- a bunch of fresh parsley, chopped
- 1tbsp lemon juice
- salt and pepper
- In a bowl, combine the ingredients for the tomatoes’s filling.
- Mash the mixture to a thick consistency.
- Stuff the tomatoes and cover with their lids.
- Serve chilled!
